Categories of mushrooms and their nutritional value

Hats can be edible or inedible. In total, about 200 of their species are known. Many of them are edible and are actively used for human consumption. For a number of signs, the fungi are similar to algae, but do not contain chlorophyll.

Nutritional value of capped mushrooms

Hats contain an incredibly large number of proteins. For example, it is twice as high in them as in chicken eggs. This makes the hat mushrooms similar to meat products. But in their composition there are many carbohydrates and various mineral substances, like vegetables. Enzymes contained in mushrooms, help in the breakdown of fiber and fat. Thanks to these properties, they are included in the daily diet of man.

Sugars, which give mushrooms a sweet taste, make them more nutritious. These products contain valuable fats. They have approximately the same degree of assimilation with animals.

Essential oils provide mushrooms with a gentle and pleasant taste. In the russula, the pears contain tar, which gives them a viscidity.

Classification of edible fungi

The following four categories of fungi are distinguished by nutritional value. The most valuable and expensive ones belong to the first. Mushrooms of the first category have high taste and qualities and are very popular among the people. These include the white red-haired ordinary, the real grapes, the giblets, and others.

The second category of mushrooms is second best in terms of quality and nutritional value. This is an ordinary brown pancake, a lobster oil dish, cultivated champignon, an ordinary mushroom, a red capote red, an aspen mushroom, a bruise bruise, a yellow mushroom.

The third group of mushrooms is average in quality, they are usually collected in "legless". This category includes the real morel, the variegated moss, the paddock, the chanterelle, the field mushroom, the russet gray and food, the pink tart, the podgruzdki.

The fourth category of mushrooms is not popular with people, is intended for amateurs. Among them are goat, red moss, green russet, white float, mushroom umbrella, winter frost, hulk, dung, squeak, rowers.

It is worth noting that such a definition of the category of fungi is conditional. Everyone has his own mushroom, which he loves.

Application of mushrooms

Mushrooms are used to heal wounds, when recovering from previous infectious diseases. They are also indicated for anemia and inflammatory processes. Calorie content of fungi is about 100 kcal / kg.

Important! Mushrooms are heavy food, the process of their assimilation is not easy. Therefore, do not use them with patients with renal and hepatic insufficiency.

Mushroom storage

It should be remembered that in fresh form all categories of mushrooms are stored only a few hours. For long-term maintenance it is recommended that they be salted, marinated or dried.

Help with poisoning

Sometimes there are inedible "doubles". But poisoning can cause even edible categories of fungi in violation of the rules for their collection. In this case, you need to immediately call an ambulance and rinse your stomach. You should drink 3-5 glasses of water (and more) with drinking soda. You can replace this mixture with a weak solution of potassium permanganate. After washing, give the victim 5-10 tablets of activated carbon. Use a laxative. Next, give a person hot tea and ensure peace. Wait for the doctors to arrive. Mushrooms must be submitted for examination. This will make a correct diagnosis.
