Camel Koumiss: Properties and Features of Cooking

The kitchen of most Asian countries uses such exotic "raw materials" as camel milk. A drink is prepared from it, which, as a rule, is called "shubat" (from Arabs, Kazakhs and other peoples). Previously it was considered the most important product of nomads. At the same time, shubat (or camel's koumiss in a different way) is highly appreciated even now, thanks to the content of substances useful for the body in its composition.

Useful properties of the drink from camel milk

Having told about the name of the camel's koumiss, we will examine in more detail the properties of camel's milk. This product has a specific taste, which has a slightly sweet taste. Camel's milk is one of the main sources of vitamins and other useful elements in the desert area. It can find a high content of proteins, fats, vitamins B, C and D, as well as minerals (iron, sulfur, calcium, phosphorus and others).

Also, the milk of this animal has anti-inflammatory and antimicrobial properties that are not lost during processing. They can be found in a drink such as camel koumiss. This can be explained by the fact that the "ships of the desert" eat a special plant, at first glance unsightly, but in fact containing minerals and a variety of different acids - a thorn.

Camel koumiss can be prescribed as a restorative for such diseases:

How do the shubat?

Camel koumiss (shubat) is quite easy to make. For this it is necessary to have a special device - a leather bag (torsik). But if such a thing is difficult to find, you can cook in wooden dishes (small barrels). The warm filtered milk of a camel is poured into a container, the leaven is added to it and left in a warm place to "reach". Drink can be consumed after 24 hours, while shaking in the process of sour is not necessary. Before serving, the shubat should be mixed and poured into bowls.

Depending on the time of aging of the drink, koumis is conditionally divided into such types:

  • Young (one-day). This species has a sweet-sour taste, it is recommended for those suffering from anemia and nursing mothers.
  • Middle Fortress (defended 2-3 days). It is believed that this drink is of better quality, since it is preserved for a longer time. However, his taste is much sourer. In this case, salt can be added to the shubat.

Cases of cure for such complex diseases as leukemia and stomach cancer are known, with the use of camel milk and drinks made from this product. Thus, according to the author of the book in Arabic, "Tarik al-hidaaya fidar mahatyr al-gin shayatyn" Bedouins helped to cure four Englishmen who were already at the last stage of leukemia. When they arrived in the desert, the sick already lost hope of recovery. However, after the treatment, which included eating and drinking from camel's milk, as well as a healing remedy from the urine of this animal, people completely recovered.
