Tsitsibeli: recipe for hot sauce

One of the sharp sauces, which are traditionally served to meat dishes, is tsitsibeli. The recipe includes tomatoes, onions and hot peppers. In some variations, the sauce is made from Bulgarian pepper. We offer several methods of preparation.

Tsitsibeli: recipe number 1

Necessary ingredients:

  • A pound of onions;
  • Slightly more than a glass (250 ml) of vegetable oil;
  • Fresh, ripe tomatoes - about 2 kg;
  • Fresh garlic - about 200 grams;
  • Hot pepper (ground or pod) - 2 tablespoons or 4 pods;
  • Salt and sugar - about 30 grams (2 tablespoons).

How to prepare tsitsibeli?

The recipe for the sauce is simple. It is enough to observe the right technology and the order of the products' bookmarking.

Peel the onion. Chop it into half rings. In a large frying pan or deep cauldron, heat the vegetable oil. Put the onion into it and put it out for 20 minutes. Pass a tomato through a meat grinder or a blender. Pour the resulting mass into the onion. Stew the vegetables for half an hour.

Step 2

Peel the garlic. Grind it with a meat grinder. You can use a grater or a blender. It should be about 200 grams of the crushed product.

If you use a hot pepper, then remove the seeds from it, remove the septums. Cut into small pieces. Put the garlic pulp, chopped pepper, sugar and salt in a tomato-onion mixture. Stew out another 10 minutes.

The sauce is ready. You can use it to extinguish meat or pour on rosettes and serve it to dumplings, khinkali or manti. If you are preparing tsitsibeli for the winter, you should first prepare the cans. Sterilize them, spread the snack in a hot form and tighten the lids.

Recipe tsitsibeli with Bulgarian pepper

It will take:

  • Ripe tomatoes - about 5 kg;
  • Onion - about 1 kg;
  • Sweet pepper - about 500 grams;
  • Half a liter of vegetable oil;
  • A small spoonful of red bitter pepper (you can take a pomegranate - 3-4 pieces);
  • Garlic crushed - 1.5 cups (about 300 grams);
  • Sugar, salt, ground pepper;
  • Parsley, coriander, dill.

Technology of preparation of cicibles

The recipe is similar to the previous one, with the only difference that it includes Bulgarian pepper and fresh herbs.
