Shashlik marinades can be cold and warm. The first ones are used in case it is necessary to obtain a quick result. The second, designed for a long time, help to get a more intense taste. It is not difficult to cook a warmed marinade. To do this, it is brought to a boil, then allowed to cool, after which they pour in meat and stand for at least twelve hours.
Here is one of the recipes for a warmed marinade with roots, necessary for cooking shish kebab from mutton. You will need:
• cool water;
• Several laurel leaves;
• 2 teaspoons of salt;
• nutmeg;
• 3 carnations;
• 2 roots of parsley;
• 3 onion bulbs;
• small carrots;
• 6 cloves of garlic;
• One third glass of wine vinegar.
Very often, various fruits or their juices are used as the basis of the composition. A simple pickle from kiwi, onion, salt and red pepper will allow you to enjoy the tenderest meat all year round. The main thing is not to keep the meat in it for more than two hours, otherwise it will disintegrate.

Recently, marinades have been gaining popularity on the basis of soy sauce. This ingredient came to us from the oriental cuisine and rightfully took its rightful place in the recipe of various shish kebab marinades. Here is one recipe for lamb shish kebab, suitable for pork, chicken, beef and turkey, as well as for fish or shrimp. Another recipe for shish kebab from mutton. Stock up:
• a glass of soy sauce;
• juice of one lemon;
• a tablespoon of store mustard;
• a bunch of cilantro;
4 medium denticles of garlic;
• 2 tbsp. Spoons of sunflower oil.
This marinade can also be used as a sauce for ready-made meat or fish.
Red meat can be marinated and with the help of strong alcohol. In this case, the composition of juniper and cognac is suitable. Take:
• 4 juniper berries;
• 3 crushed buds of cloves;
• a teaspoon of cinnamon;
• a teaspoon of black pepper;
• a little grated nutmeg and thyme;
• 2 bay leaves;
• 150 gr. Cognac.
It is better to use liqueur or beer for shish kebab from a bird.
Marinade honey with liqueur:
• 1 tbsp. A spoonful of any liquor;
• 1/2 tbsp. Spoons of honey;
• 2 tsp mustard powder;
• salt.
Marinated honey with beer:
• a teaspoon of honey;
• 2 medium cloves of garlic;
• some salt;
• 1 tbsp. A spoon of grated ginger;
• half a liter of beer (preferably light);
• 70 gr. Marmalade (citrus).
If the meat that you have to pickle too hard, prepare the following:
• whole garlic head;
• several bulbs;
• 0.5 liters of cucumber brine or sour domestic kvass;
• 3 tbsp. Spoonful of vinegar;
• salt.

When marinating meat, remember the time. To maintain any type of meat should be at least an hour, then it is sufficiently impregnated with all the ingredients involved. It is also important not to overdo it, otherwise the meat will become too loose and tasteless. Any recipe for a shish kebab from mutton, given above, will make you experience real pleasure.
