Today, this product can be made from completely different components. For example, very often the pastille is made from whipped apple puree (it is better to take sour fruit). In addition, it is customary to prepare the mentioned sweetness from the pulp of the following berries: rowan, lingonberry, raspberry and currant.

Also in the composition of the pastille must necessarily include granulated sugar. After all, without this ingredient, it will be sour and tasteless. By the way, before the 19th century instead of sugar, ordinary honey was added to the pastille.

What other ingredients include homemade pastille? Doing such a delicacy at home, some housewives put egg white in it. This component is optional. However, it is due to him that the pastille becomes much lighter.

Where do they dry?

Previously, berry or apple pastilles, the recipe of which we will consider below, was made exclusively in the Russian oven. Such heat treatment is suitable for making this sweetness best. After all, the oven gives the effect of gradually fading heat, which ensures uniform drying of puree, honey or sugar, as well as egg white.

Today, such a product is dried in the sun, in a special dryer or in the oven. If you decide to use the latter option, then you should know that it is necessary to cook this pasty for a long time at minimum fire.

Making sweetness at home, you always know what composition it has. However, this can not be said about the shop delicacy.

So which ingredients includes the purchased pastille? The composition of the product should always be indicated on the package. As a rule, shop pastila includes the following components:

  • Fruit puree (for example, apple);
  • granulated sugar;
  • Wheat flour or starch (for bonding the product);
  • Products of animal origin, namely chicken eggs.

Among other things, some manufacturers add dyes and flavors (natural or synthetic), flavor enhancers, preservatives, emulsifiers and fillers to the product.

How to make a pastille at home?

Preparation of homemade pastilles takes quite a long time. However, the result will definitely please you.

So, we need:

  • Apples sort Antonovka - about 2 kg;
  • Granulated sugar - 200 g.

Cooking process

To make a homemade pastille, you need to wash all the fruits well, and then clean them, put them in a bowl for baking and pour ½ glass of water. In this form, the ingredients must be sent to the oven for 40 minutes. Cooking apples is desirable at a temperature of 170 degrees.

After the fruits become soft, they should be removed from the oven and wiped through a sieve. Having received a thick mashed potatoes, it must be boiled for a third, putting on a small fire. This process can take you about 30 minutes. In this case, all ingredients should be stirred periodically. In the end, you should get a very thick and slightly golden mass.

To make homemade pastilles air and light, to mash it is required to add granulated sugar, and then beat it with a mixer.

After the described actions, the apple mass should be placed on a baking sheet, which should be laid beforehand with parchment. Puree it is desirable to lay out a thickness of 2-3 centimeters. If in the future you are going to roll the dried up paste in a tube, then the layer of apple mass should not be more than 5 millimeters.

Dry the ready-made semi-finished products in the sun. But in this case the pastille will be ready only in a few days. If you need to get sweetness today, then we suggest placing the stuffed baking sheet in the oven. Prepare such a paste is desirable at a minimum capacity of about 11 hours. At the same time it is desirable to keep the oven door ajar.

After the pastille has dried, it must be removed from the baking sheet along with the parchment. Put the product on the board with paper up, it should be covered with a damp towel. In a few minutes the parchment will go away by itself. In the future, you can sprinkle the sugar with powdered sugar, cut and roll into rolls. Store them preferably in a refrigerator in a bag.
