Mushrooms Poddubniki, considered conditionally edible, grow in sparse mixed forests, often on the fringes or edge of the forest. Collect them in the period from July to September. Distinguish the dodum from other fungi easily on a thick, velvety, fleshy bonnet, which can be olive-brown, brown or yellowish-brown. This fungus has a lemon-yellow dense pulp, which quickly becomes blue when cut or broken. The yellow-orange cylindrical leg reaches 15 cm in length, the cap is 20 cm in diameter. Poddubniki have excellent taste characteristics, therefore it is widely used for preparation of various dishes, including soups, salads, sauces. They are also salted, marinated and dried for the winter, and the entire mushroom is used in its entirety: both the leg and the cap.

Mushroom Poddubnik: how to cook and process

After the collection, the mushrooms must be quickly processed. It is known that they are very poorly stored and quickly deteriorate even in the refrigerator. Therefore it is advisable to recycle not later than 4 hours after collection. If you buy poddubniki, then choose strong, beautiful, young specimens, without dark spots and wormholes. How to properly treat poddubniki: it is necessary to clean them well from the ground and sand, rinse under a gentle stream of running water. Sharp knife to gently scrape the top layer of pulp. After the whole batch of mushrooms is cleaned and washed, you can start to boil. We advise not to neglect this procedure! Place the mushrooms of the podubniki in a saucepan with salted water and cook them for 20-25 minutes. Regularly remove the foam. After that, put them in a colander and leave them alone for a while.

Mushrooms Poddubniki: cooking in the oven with sour cream

After cooling and draining of excess liquid, mushrooms are cut into small pieces. Pour a little vegetable oil in a frying pan and fry the mushrooms in it for 10 minutes over medium heat. Add the same onions, cut into small cubes. Cover the frying pan with a lid and simmer for another 10 minutes, remembering to stir the mushrooms of the podubniki periodically. Lubricate the saucepan with butter and transfer to it fried mushrooms with onions. Separately we warm sour cream and pour it into the same place. We take a clove of garlic, crush it in a garlick and sprinkle our fragrant cream-mushroom mixture. We rub the hard cheese on the grater and spread it into the saucepan. We put the container in a preheated oven to 200 ° C and bake the ingredients for 20 minutes. Before consumption, sprinkle mushrooms with chopped greens. You can serve with pasta.

After pre-boiling, leave the mushrooms cool in a colander. Then cut them into cubes and put them in a frying pan with sunflower oil. We peel the potatoes, cut it and add it to the mushrooms. There also add finely chopped onions. Fry until ready, not forgetting to stir constantly. Salt and pepper, add spices to taste. When serving, you can sprinkle a dish of sour cream and decorate with dill and parsley. To taste, podubniki somewhat resemble ceps, so it is highly recommended to try them in fried form.
