Beets are a part of many dishes, without which it is difficult to imagine a daily and festive table. What dinner without borsch and a new year without vinaigrette? Beetroot is useful for both salads and herring under a fur coat. It would seem that cooking it, like other vegetables - a simple task. But only experienced culinary experts know how to cook beets tasty. At the same time, so that the root crop does not lose an attractive appearance and dietary benefits. After all, beet contains a lot of vitamins, minerals and trace elements, including vitamin C.

How to brew red beets correctly: tips

1. The best result will be with small roots - no more than 10 cm in diameter, large ones are often loose inside and tasteless. Vegetables should be free from damage, traces of mold and rot, thoroughly washed. Try not to damage the skin, so that useful substances do not break down when cooking. 2. Do not cut the tails and do not clean the beet, so as not to lose the juice. Do not salt water, because the vegetable contains a lot of sodium in itself, a surplus of salt will ruin its sweetish taste. If necessary, the beets can be salted after cooking.

3. To preserve the bright red color, sweeten the water or add a little vinegar or lemon juice to the pan.

4. Try to cook root vegetables of the same size, so they are simultaneously ready.

How and how much to cook beetroot?

For cooking beets, choose a pan that is slightly more vegetables - between them and the walls should remain about 1 cm. Traditionally, the roots are cooked in cold water, so the vitamins are more conserved, but the cooking time also increases. The process can be accelerated by placing vegetables in boiling water. The water level should be about a finger above the level of the beet. Cover the pan with a lid and put on a strong fire. After the water in the pan boils, continue beet cooking on a quiet fire, adding water as needed. The cooking time can vary from one to three hours, depending on the size, the number of vegetables.

Roots are ready when a fork, toothpick or a thin knife is easily pierced.

Beet production in a multivariate

Multivarka provides ample opportunities for the preparation of beets. The built-in programs will allow to cook vegetables without loss of taste and aesthetic qualities and will enable the owner to do other things. There are different ways how to cook beets in a multivark.

The most common and most useful is steaming. All is extremely simple: small roots should be thoroughly washed and put on a plastic grill-steamer. Or cut the large beets into pieces. Pour in a bowl multivarka water to the bottom mark, put the vegetables. Close the device and select the "Steamer" mode for 40 minutes. As a rule, vegetables are perfectly cooked when the timer is finished.

How to cook beets in a pressure cooker?

Pressure cooker allows you to reduce cooking time by 3-5 times. After all, this miracle casserole does not lose heat during evaporation, and the food in it is cooked under steam pressure. If you have such an assistant in the kitchen, you do not need to think long how to quickly cook beets on a salad.

Before you start cooking, make sure that the pressure relief valve is not clogged, the o-ring is correctly inserted and the pan cover is snug. Pour at least 250 ml of water, orientate to the size of the pan - it should not be filled more than 2/3. Lay the washed vegetables and start to cook them. After cooking, be sure to release the steam, otherwise the root vegetables can boil.

So how much to cook beets in a pressure cooker? The answer depends on seasonality, the young vegetable is cooked for 10-15 minutes, depending on the size, the old one is 25-30 minutes.

Many modern multivarks also have such a function of a pressure cooker. For cooking in a bowl, pour one multivach glass of water for 1-2 root vegetables, if it contains a metal stand for vegetables - it is better to use it so that the vegetable does not stain the appliance. Put the beet on the stand and close the lid. If you want to reach the right pressure quickly, fill in the hot water. We set the mode "Soup / Brew" for 30 minutes. When the timer is triggered, gently release the steam, be careful not to burn yourself. In order not to spoil the wallpaper and ceiling in the kitchen, do this under the hood or in front of an open window.

Beetroot in microwave oven

Another new way, how quickly to cook beets on a salad, will require the use of a microwave oven. Of course, this option is very different from the usual saucepan on gas, but in terms of speed, it significantly outruns.

Contrary to popular belief, beets do not need to be pierced before cooking in a microwave, it does not burst in the process. Cooking should be either in a glass container with a lid, or under the usual lid for a microwave. Plastic containers with a valve for steam output are also suitable. There is no need for water.

The cooking time depends on many factors: the size of the vegetables, their humidity, the power of the appliance, the material of the dishes, the volume of the products. Approximately, a small amount of beet with a microwave power of 1000 W is cooked for 10-15 minutes. It should be borne in mind that beet belongs to those vegetables that are themselves cooked, so you do not need to restrain them. It's better to get them when they seem slightly undercooked.

If a lot of vegetables are cooked at the same time, put the smallest root crop in the center, because the microwaves will act worse on it.

Note, if the beet was cooked in a glass bowl, it can not be filled with cold water, the glass can burst.

An unusual way to cook beets in a microwave oven

But modern owners and these innovations are few. They know how to quickly cook beets on a salad and do not even get dirty dishes. In the microwave oven, the beetroot can be prepared in a plastic bag. To do this, washed vegetables are put in a large enough bag and tightly knotted to ensure the tightness of the package. The method is not for the timid, but it works, and nothing to wash after cooking is not necessary.

How to cook beets and carrots, so that both vegetables have a marketable appearance? The main thing is not to forget that they have different cooking times. While the beets are still hard, the carrots will long boil and will not be suitable for cutting into salad. There are two ways to solve this problem:

1. Start to cook carrots, when the beets are already brewed, ie, a maximum of half an hour before you plan to get it. Both vegetables are cooked synchronously.

2. Start cooking all at once, but do not forget to check the carrots with a fork and toothpick, so as not to overexpose it. Beets should be placed on the bottom of the pot, and carrots on top.

Accelerated beet cooking

In the pre-New Year's mess, and not only, the question arises as to how quickly to cook beets on a salad. The fastest vegetables will be ready if they are peeled and cut.

The cooking time - that in a conventional saucepan, that in a multivarque (both cooking and steaming) - is halved. But so beets will lose almost all vitamins and nutrients, color and taste will be poorer, so it is better to resort to such a method only in extreme cases. And the chopped beetroot will color the saucepan or the grill of the steamer.

And if you need to speed up the traditional preparation of a particularly large specimen of the vegetable, then do this: boil it for an hour, then take it out and rinse it with cold water. After that, cook for another 20 minutes and then "redeem" again. The beetroot will be ready for slicing.

In general, the smaller the root crops, the faster they cook.
