Dietary delicacy: stewed fish in sour cream

Fish dishes for many gourmets are a delight. Low-calorie and healthy, fish-cooked delicacies also have an excellent delicate taste. Especially mellow, juicy and slightly sour taste has stewed fish in sour cream. This simple and at the same time refined dish is easy to prepare even for a beginner hostess.

For this purpose, any fish is suitable: pollock, pink salmon, carp, catfish. The only thing you should think about in advance is whether you want to extract fish bones in the process of eating. In case you are not too choosy or presume to extinguish the fish until the moment when the bones are separated from the meat, then you can use any fish. If you decide that extracting bones is not your favorite occupation, then it is better to use fish that contains a small amount of bones or use fillets.

So, first you need to cut the carcass: clean them from the scales, remove the heads, fins and tails and rinse thoroughly. Then the fish is cut into portions or cleaned from the ridge and costal bones. However, if you want to impress your guests with the beauty of the dish, you can cook whole carcasses. But in this case, do not forget that the cooking time will increase substantially.

Then prepare the onions: cut it in small or large (depending on the desire and taste preferences) pieces and fry in vegetable oil for a few minutes. Sometimes to the onion add grated carrot on a large grater. In this case, the overall taste of the dish becomes more sweet. Fry carrots better at the same time with onion for about five minutes on medium heat. Do not forget to stir the weight all the time to avoid burning. Then water is added to the resulting mixture and extinguished for another fifteen minutes. In the end, many also add tomato paste. After this, you should put the prepared fish into this mass. To stew fish in sour cream had a firmer consistency at the end of cooking, it should also be slightly fried. Therefore, slightly increase the heat and fry it for about five minutes until lightly whitened on both sides.

On this first stage of cooking can be considered complete, provided that you are a healthy person who simply loves fish dishes. However, fish with sour cream, among other things, can be one of the main dietary dishes. Therefore, if you or your relatives are fried, then you can do without this stage.

In this case, you should simply cut the onions and fish and grate the carrots. All this (in raw or roasted form) is poured with water or fish broth and, of course, sour cream. Here it is worth remembering that the stewed fish in sour cream is a dish that does not have special subtleties in cooking, so do not waste time on the special preparation of broth for pouring - you can get by with water.

By the way, some cooks consider water to be an excessive ingredient and advise using only sour cream as a fill. Nevertheless, braised fish in sour cream risk burning if you decide to quench it in a mixture of a thick consistency. Therefore, it is better to pour first the water and extinguish the fish for about fifteen minutes (depending on the type of fish and the size of the pieces), and then add sour cream and simmer for another twenty minutes. Salt, pepper and other spices are usually added at the same time as water. After the frying pan is removed from the fire, the dish is usually kept under the lid for about half an hour, so that the fish can soak up the aroma and taste of pouring and spices.

Do not forget also that it is possible to add some extra ingredients to such a classic dish as fish in sour cream. The recipe can be changed according to your preferences and the products at hand.
