Ingredients:

- 450 g of beef (shanks, thighs, etc.);

- 1 medium onion, finely chopped;

- 1 medium carrot, finely chopped;

- 1 stalk (rib) of celery, finely chopped;

- 15 g dried mushrooms, soaked in 500 ml of warm water;

- 1 stick of cinnamon;

- 3 cloves of garlic;

- several branches of fresh thyme;

- 1 tablespoon of tomato puree (pasta);

- about 250 ml (1 glass) of red wine (you can use less);

- 400 g of canned tomatoes;

- 1 tablespoon of orange jam;

- a large bunch of fresh parsley or basil leaves, finely chopped or torn;

- salt and pepper to taste.

Variants of cooking the dish of Bestergan from beef:

- Instead of using a cinnamon stick, use ¼ - ½ teaspoon ground cinnamon to taste.

- White wine or cider will be used instead of red wine.

- If you do not want to use alcohol, you can use 1 tablespoon of balsamic or red wine vinegar.

- Replace fresh thyme with fresh fresh grass - oregano, marjoram, rosemary, etc., or you can use dry herbs.

- Use the juice and zest ½ oranges instead of jam.

How to cook beef burgers

Start by soaking the mushrooms in warm water. For this recipe you need to cut it finely. Grind carrots and celery, you can grate them or cut them.

Slice the onions:

- Cut the bulb in half.

- Start grinding the halves of the bow at an angle.

Cut each clove of garlic into 2-3 pieces horizontally. Take one piece of garlic. Cut it in small pieces, starting from the root end and ending with the end of the rod. Do this with each piece.

How to cook beef burgers - preparation of meat

Cut the meat finely to speed up the cooking, and then season with salt and pepper. Place in a large sauté pan or pot over medium heat. Pour about 1 teaspoon of butter, distribute it on the bottom of the pan. When it is warm, add the beef. When the beef is beautifully browned, turn it over to the other side. Put the meat out of the pan.

Reduce the fire to medium.

Add the onions, carrots and celery to the pan, mix with mushrooms, cinnamon stick and cloves. Mix everything together, and then extinguish everything for 5-10 minutes until soft. Add fresh twigs of thyme and garlic, cook the beef burgers for a few minutes. Put the tomato puree (paste) and fry all for a minute or so.

Pour red wine or any other alcohol. If you replace wine with vinegar, you should not add it. Let the wine evaporate by half on a high heat. The dish should become thick. Put the tomatoes, bring it to the boil, reduce the temperature to medium and simmer for about 15-20 minutes. If you did not add wine, now you need to add the vinegar.

Bring the liquid to a boil, then place the beef back into the pan. Reduce the temperature to low, cover and extinguish for 1½ -3 hours. Periodically, you need to stir the dish.

When a dish of Bestergan beef is ready, you can add seasonings to taste.

Melt the orange jam and add to the dish. Remove cumin and stalks of herbs. Add parsley or basil before cooking.

Serve the dish immediately.
