An excellent idea for a daily or festive dinner can be a mutton leg in foil with vegetables. In Poland and the Czech Republic this dish is considered to be national. Let's give a detailed recipe.

We bake a leg with vegetables

Usually, mutton is not baked completely. The meat remains a little pink inside. But this way of cooking will make lamb juicy and tender. If you want to get a similar result, set the time to 1 hour 10 minutes. Fans of well-roasted meat need to increase the baking interval to 2.5 hours. Of course, the time will depend on the size of the selected piece. The larger it is, the more time it will take to prepare it. When choosing meat, give preference to a young and low-fat lamb. Then the prepared dish will turn out especially juicy and fragrant.

For this recipe, you will need the following products:

  • Lamb leg weighing approximately 2-2.5 kg;
  • Several heads of garlic (about 10-12 teeth);
  • A bundle of cilantro;
  • Salt, freshly ground pepper of various kinds (white, black, pink);
  • A few spoons of oil (sunflower or olive);
  • Potatoes of small or medium size with a total weight of about 1.5 kg;
  • Laurel leaves;
  • A quarter of a pack (about 50 grams) of butter;
  • Cherry tomatoes - 10-12 fruits;
  • Foil and wooden skewers (toothpicks).

Preparation of the lamb leg in the oven

So, you should start with the preparation of meat. Clean your feet well of the films. Peel the garlic from the peel and cut each of the teeth in half. Cilantro wash, dry and cut into smaller pieces.

In the mutton leg, make incisions: vertical, a couple of centimeters deep. In each of them you need to put half a clove of garlic. Prepare the mixture from a spoonful of salt, two spoons of pepper and a specified amount of vegetable oil. In the cuts with garlic, put a small amount of this mass. Lubricate the foot, rub the remaining garlic mixture. Leave for half an hour. The meat will be soaked with the aroma of spices and spices.

We bake a leg of mutton in a large baking sheet. It should be lined with foil in two layers. Tear off the necessary length so that the foil completely covers the foot. Now put the meat in the middle, carefully wrap it - the juice should not flow anywhere. We bake a leg with a leg either 1 hour 10 minutes, or 2.5 hours - depending on what degree of roasting you like. The temperature of the oven should be about 180 degrees.

We bake a lamb leg in an oven and at the same time prepare a side dish. Take potatoes, peel it, boil until half cooked. In the potato broth, you can add a couple of laurel leaves and cloves of garlic. So it will become more fragrant.

In a frying pan warm up two kinds of butter: vegetable and cream. In it, fry the potatoes until ruddy. Pepper, put salt.

Cherry the cherry tomatoes . Do not remove the stem from them, it will be an additional decoration for the dish. Take toothpicks or wooden skewers according to the number of prepared tomatoes.

After the meat is baked, you need to get it out of the oven and gently open the edges of the foil. Stick a leg of skewers in a lamb, put a cherry tomato on each of them. Now put the meat in the oven again, without covering it with foil. Once the surface blushes (this is about 10 minutes), take the leg out with the lamb. Longer to keep it is not necessary, otherwise the meat will be dried.

Transfer the meat into a large dish. Bone wrap in white paper. Pour lamb with potato juice, lay out around the leg. Decorate the dish to your liking (you can put the greens) and serve. Eat lamb hot. To her wonderful red dry wine.
