What is a recipe for a dish

You can say that this guide is how to cook a certain culinary product. It informs the cook about what foods to take, in what quantities and proportions to apply, how to process and mix. This includes the intended serving of the dish (its various methods), already prepared culinary product. Usually, the most delicious recipes, tested by time, are passed orally (at least earlier, when the method of cooking one or another of the dishes was transferred from the teacher-cook to the student). And also published in various culinary publications, paper and electronic, distributed in television programs about cooking.

What does the recipe include?

  • What is a recipe in an ideal? Firstly, this is the name of the dish and its belonging to one of the national cuisines (if the recipe is universal - not specified). For example, "Azu from mutton in Tatar".
  • Secondly, the cooking time of this dish.
  • List of ingredients, the number and proportions of products from which this dish will be made.
  • Equipment with which the food will be cooked.

But this is ideal. And usually the recipe assumes the name of the dish, the ingredients and the number of products, the step-by-step instruction of preparation - in the abridged version.

Classification of recipes

They are usually divided according to the type of dish: salads and snacks, first, second courses, desserts, drinks. By meal time: breakfast-lunch-dinner (and also: afternoon tea, lunch). By the way of preparation: fried, stewed, boiled, baked.

National Recipes

Each national cuisine has its favorite recipes, which make up its main "core".

In Russian cuisine, these are pancakes, cabbage soup, all kinds of pies and pies with fillings, ear, botvina, okroshka. Also syrniki, pancakes, all kinds of pickles from vegetables: cabbage, cucumbers and tomatoes. From drinks - sbiten, kvass, mors. Bread products - loaf.

What is a recipe classic

There is a special category of dishes, universally recognized by culinary experts, professional chefs all over the world. These are the so-called classic recipes. To make it clearer, we will give just a few examples (in fact, there are a lot of them in different cuisines of the world).

French omelette

Ingredients: three eggs, butter - 15 grams, freshly ground black pepper, salt, dill and parsley.

Preparation. Eggs uncooked into a bowl. Solim-peppers. Fast stir the eggs with a fork, as if whipping. The mixture stretches if it is lifted with a fork. In the pan, well heated, put butter. It should start to foam, but not become brown. We pour out the mixture of eggs. We are waiting for 10 seconds, until it seizes. To eggs more likely to thicken, we actively stir the omelet with a fork back and forth. As soon as this happened, we separate the omelet from the frying pan and shake it out onto the plate. Sprinkle with fresh chopped greens. We serve hot on the table.

Greek salad

Ingredients: olives without pits - 100 grams, pinch of marjoram, two tomatoes, one red onion, a pinch of oregano, ground black pepper, cucumber, wine vinegar, olive oil, sweet pepper - 1 piece, green pepper - one piece, feta cheese - 200 Grams.

Preparation. Cucumber and tomatoes are mine, cut into cubes. Pepper is cleared from the core and cut into strips. Onions are cleaned and cut into half rings. Beat the mixture: butter, marjoram, vinegar, oregano, pepper and salt. Feta cut into cubes. Black olives - in half or circles. Everything, except cheese, we mix, we fill. Fetu is laid out on top of the salad and served to the table.
