Adjika is a mixture of spices, herbs, hot peppers and garlic, which it is customary to cook in Abkhazia. But over time, the meaning of this word was slightly distorted. Many prepare a dish according to their recipes, which are far from the original. In a real adzhika never add tomato or tomatoes. It includes basil, saffron, coriander and many spicy herbs. It is the aromas of Abkhazia. The seasoning can be called acute. We will discuss the adjika recipe in this article.

Few facts

Despite the absence of tomatoes, the color of Adzhika is red because of the large amount of hot pepper. But there is another kind of this seasoning. This is a green adzhika. It is cooked in Abkhazia from green pepper and herbs. But today, make seasoning with tomatoes, Bulgarian pepper, apples and other ingredients and call it Adzhika. The main thing - it should be sharp. The adjika's recipe can be classic or with supplements, but it's still a delicious seasoning.

A real adzhika

How is the Adjika preparing Abkhazia, sharp? The recipe is very simple. We take 1 kilogram of hot pepper, 200 grams of walnuts, three quarters of st.l. Salt, three large spoons of coriander seeds (ground), a bunch of parsley and cilantro and 300 grams of garlic. Pepper is washed and seeds are removed. Hands after such work will just burn, so it's better to use gloves. Then let the pepper through the meat grinder. So do with walnuts and garlic. Green must be crushed with a knife. Now mix all the ingredients and add to them salt and ground coriander. The mixture is very sharp. The recipe for Adzhika does not imply cooking. Leave this mixture on the table for three days, sometimes stirring it. Then we spread it to the banks and put it in the refrigerator.

To the best of acute adzhika

And now the option of cooking this dish, but quite different. This, of course, is a digression from the classics, but also delicious. Take five kilograms of tomatoes, half a kilogram of onions, apples, carrots and sweet peppers, 300 grams of garlic, two large spoons of salt, three tablespoons of sugar, a glass of vegetable oil and a bunch of fresh parsley. To begin with, prepare the vegetables, thoroughly washing them. Then cut all the components of Adjika into large pieces. Now they must be crushed thoroughly. We use for this purpose any convenient technique (meat grinder, blender, etc.). Put the mixture in a saucepan and add salt, sugar and vegetable oil. We cook adzhika for 1.5 hours. The fire must be made small and constantly stir the mass. Finished dish to be placed in clean jars and closed with lids. The appetizer turns out to be rather sharp. The adjika recipe does not contain any hot pepper, but it can be added.

Very sharp Adjika

We take 1 kilogram of hot pepper, half a kilogram of garlic, 500 grams of fresh coriander, 20 grams of fresh dill and basil. Pepper is cleaned of seeds and put to dry. It should become sun-dried. After that we grind it on a meat grinder along with garlic. We cut the greens with a knife. You can take more coriander seeds and pound them in a mortar. Now connect all the ingredients and add a glass of salt. All mix. This is a real recipe for acute adjika for the winter in Abkhazian. Keep it in the refrigerator.
