Tatar gubadia: a recipe with a court and dried fruits

For all its uniqueness, many dishes of cuisines of different nations have analogues. This is also the Tatar gubadiya. The recipe for its preparation resembles a Russian kurik. The essential difference is that in the kurik layers of different fillings are shifted by pancakes, but in gubadia - no, and the filling itself does not resemble the traditional Russian one.

Gubadiya: the recipe of the test

Ingredients:

  • Yeast dry - 1 sachet or pressed - 30 g;
  • Margarine or butter - 100 g;
  • Milk - 300 ml;
  • Flour - 3 cups;
  • Sugar - half a spoon of a dining room;
  • Salt - about a teaspoonful;
  • Eggs - 2 pcs.

Depending on the type of yeast used, "create a quart", as our grandmothers said, that is, knead the dough. Pressed yeast is placed in a cup with pre-heated milk to 38 degrees (100 ml), stir, place the same sugar and a tablespoon of flour. For 15-20 minutes, the mixture will turn into a foam cap, which means that our opara is ready. While she is coming, we are doing the test ourselves. Oil or margarine melt and cool until warm. We pour the flour and salt into the container for the dough, mix it, add butter and eggs, mix again thoroughly. Then add the spoon and mesh the dough, pouring the warm milk as needed. Should get a soft and plastic mass. Cover with a wet napkin and clean in a warm place for an hour or two. As soon as the dough rises noticeably, we remove it and leave it again. With dry yeast: add them directly to the flour together with salt and sugar, everything else is similar to the above described process, unless the time of planting is significantly reduced.

Gubadia: the recipe for the filling

The main ingredient is the court. This is a specific red Tartar cottage cheese. If there is no possibility to buy the finished one, we will do it ourselves. It is difficult to imagine a recipe for Tatar gubadia without this product.

Ingredients for courts:

In a deep frying pan heat the curd until it turns pink. Then add sugar and butter. All together boil on low heat, continuously stirring until the mass is not painted in a light brown color.

Ingredients for filling:

  • Court (ready or made by yourself) - 500 g;
  • Rice boiled (preferably long-grain, so as not to stick together) - 200 g;
  • Eggs boiled and chopped - 4-5 pcs .;
  • Dried fruits steamed and finely chopped - 100 g;
  • Butter - 100 g;
  • Sugar - 2 tablespoons.

Round the round baking dish with oil. 2/3 of the test is separated, rolled into a circle and transferred to a mold. Lay the layers of the filling:

  • court;
  • Rice;
  • dried fruits;
  • butter;
  • sugar;
  • Eggs.

The remaining dough is rolled, laid on a cake and beautifully tied.

Gubadiya: recipe for sprinkling

And again, associations with other national cuisines: the English people call this thing "crumble".

Ingredients:

  • Butter - 50 g;
  • Sugar - 2 tablespoons;
  • Flour - 100 g.

Mix them with each other and rub it to make crumbs. They, and sprinkle the pre-smeared milk top pie. Important point: gubadia does not take time to proof, it immediately needs to be put in the oven.
