Sugar mastic in decoration of holiday cakes

What holiday does without such a sweet treat, as a cake. Today, more and more housewives prefer, along with the usual decoration of cakes, to use sugar mastic, with which it is possible to transform dessert beyond recognition and turn a cake into a real work of art.

Sugar mastic is quite simple to manufacture, and there are a huge number of recipes for its preparation. Each landlady has her own favorite recipe, so if you are new to this business, then you should try a few, then stop at the one that you like most. Regarding the mastic, there are several rules that must be respected so that the treats are not only delicious, but also beautiful. So:

Rule number 1. In no case sugar mastic is applied to a wet substrate, since in this case it can simply dissolve in it. As a layer on which you can apply mastic, you should use a dry biscuit or oily cream.

Rule number 2. With the impregnation of mastic with liqueur or some syrup, be careful and do not overdo it. Any mastic is very afraid of excess moisture.

Rule number 3. When rolling mastics, keep in mind that its thickness should be at least 3 mm, which will preserve its integrity. The very same rolling should be done on a table, sprinkled with starch or powdered sugar. It is convenient enough to use as base two large sheets of polyethylene, which are oiled with sunflower oil.

Rule number 4. Mastic, cooked on gelatin, remains edible for 5-7 days, after which it hardens to such an extent that it will be problematic to chew it. That's why the products made of sugar mastic should be done at least 1 day before the solemn event.

Among the many recipes that can be found in books and the Internet, the most popular are the following:

1 Recipe. Sugar mastic on condensed milk. Here we need 50 grams. Milk (dry), 30 gr. Condensed milk and 50 gr. Of powdered sugar. In addition, you should prepare glycerin, gelatin and glucose.

We put water on the fire, but we do not bring it to a boil. When it becomes warm, we add gelatin (1.5 teaspoons) and dried milk (50 grams), constantly mixing our mixture, until the whole composition becomes a homogeneous mass. In hot gelatin, add glucose and glycerin, then gradually pour into the resulting mass of condensed milk. Then we gradually pour sugar powder into our mixture, constantly mixing it all with a spoon. After some time, the composition will become very thick, after which the kneading should be continued with hands. In the end, we will get a ready-made mastic, which should not stick to your hands.

How to make sugar mastic on honey and is it possible in principle? The answer is yes. In the second recipe, we'll show you how.

2 Recipe. Mastic sugar on honey. We take 500 gr. Sugar powder, 10 grams of gelatin, 2 tbsp. Spoons of honey, 2.5 tbsp. Tablespoons of butter and 6 tbsp. Spoons of water. In warm water, soak the gelatin for 35-40 minutes, then warm it in a water bath. Meanwhile, honey is poured into a cup and poured into it melted butter. After that, we add chilled gelatin and sugar powder into it, stirring it all with a wooden spatula. When the mastic becomes a homogeneous elastic mass, it is considered ready. Honey sugar mastic is very delicious, and is widely used with a wide variety of cake decorations.

Separately, it should be said about the peculiarities of the designer's art of decorating desserts and cakes. One of the colorful elements of any cake can be flowers made from honey or ordinary mastic. To do this, you need to buy special molds, as well as stock up a small knife. Flowers made of sugar mastic will perfectly decorate any cake, add refinement and spring freshness to it.
