Mexican flat cake. How to make a tortilla: recipe

Mexican cake with various fillings has firmly entered the life of modern Russians along with such fast food dishes as shaurma or hamburger. We are no longer surprised by the exotic tartily, tacos or fachitos. To create a lunch in the Mexican style, no special culinary skills are required. In this article, we will tell you how to make a tortilla at home. Also you will learn how to make yourself from simple products a real burrito, enchilado and tacos.

Tortilla tortilla

Mexican cuisine is known all over the world for its traditional snacks, which are very tasty and simple to perform. Most of them are fresh corn tortillas with different sauces and various fillings. The tortilla is prepared very simply:

  • Mix in a large bowl three glasses of wheat flour, a bag of baking powder and a little salt. Two tablespoons of butter and chop with a knife or grate. Rub all ingredients with your hands until they turn into crumbs.
  • Half a glass of hot water gradually add to the flour. Knead the soft dough and divide it into pieces, equal in size to the chicken egg. Cover the workpieces with a towel and let them rest for about 15 minutes.
  • Sprinkle the working surface of the table with flour and roll out thin pancakes from the prepared dough. Mexican flat cakes are baked in a hot skillet without oil until the surface is browned and bubbled.

To cook corn tortillas, take wheat and corn flour in a 1: 1 ratio. Ready-made Mexican tortillas can be stored for a long time in the freezer if wrapped with parchment or food film. To use the tortilla, you will only need to defrost it at room temperature, and then reheat in a microwave oven.

Tortilla with chicken

This wonderful dish can replace a full dinner, and it is prepared very simply:

  • Chicken breast cut into small cubes and fry in a frying pan until cooked. Do not forget to season it with salt and pepper.
  • Tortilla sauce we will make of sour cream, chopped garlic and ground chili.
  • Cut tomatoes into slices, and cucumber to straws.
  • Heat the tortilla with sauce, lay on it a couple of sheets of lettuce, vegetables, tomato paste and chicken.

  • The most important component of this dish, of course, is the tortilla. At home, these tortillas can be made from flour and water as described above. If you do not want to bake, you can buy ready-made ones and use them as a basis for burritos.
  • 500 grams of minced meat fry in vegetable oil until half cooked.
  • Peel one onion, chop it and put it in the frying pan to the meat. When it is browned, add chopped Bulgarian pepper, chopped chili (to taste) and canned beans.
  • Sprinkle the vegetables and sprinkle with lime juice.
  • Put the filling in the center of the flat cake and wrap it with a tube.

If you want, you can change the number of ingredients, add other vegetables or sauce.

Enchiladas

Like many other Mexican dishes, enchiladas consists of fresh tortillas, fillings from meat and vegetables, as well as salsa (special sauce).

  • Half a red onion cut into small cubes, and carrots grate. Fry vegetables in vegetable oil.
  • Boiled chicken breast (or grilled chicken), divide into fibers and fry with vegetables for several minutes.
  • On the warmed tortilla, put the stuffing and wrap them in tubules.
  • When all the tubes are ready, they should be fried in oil or heated in a microwave oven.
  • Pour green salsa into shallow plates, lay a few tubes in a row on it. Top with enchilados sour cream and sprinkle with grated cheese.

Tacos

A freshly baked Mexican flat cake with a meat filling has such a vivid taste that the tongue does not turn to call it fast food. Natural products in combination with fresh vegetables and herbs can not be compared to buns, sausages and sauces of incomprehensible origin. Prepare this wonderful dish very easily:

  • Peel one onion, cut it into strips and marinate in one tablespoon of vinegar.
  • A bunch of parsley grind, mix with onions, a spoonful of sugar, salt and black pepper.
  • 300 grams of calf tenderloin pass through a meat grinder and fry in a frying pan for a few minutes.
  • Sweet paprika and a large tomato chop, and then shift to the meat and cook everything together under the lid until ready. Do not forget to salt the filling and season it with chili.
  • When minced cold, put it on the tortilla, sprinkle with onions and pour a spicy sauce. Bend the cake in half so that the filling is distributed evenly, then serve on the table.

Quesadilla

This is another popular dish of Mexican cuisine, which is made from tortilla, meat, vegetables and cheese:

  • Chicken fillet cut into a cube and fry in a frying pan until half cooked.
  • Onions, tomatoes and sweet peppers are also cut into cubes and put out with chicken.
  • Add the canned corn, tomato paste, salt and pepper to taste in the frying pan.
  • Hard cheese grate on a large grater and put on one half of the cake. On top, put the filling, and then another layer of grated cheese. Fold the cake in half, cut into two pieces and fry in a heated frying pan on both sides.

Fajitas with meat

According to the classic recipe, beef that will be used for this dish should be marinated in a special way for two or three days. However, we suggest you use a simpler version of the preparation of this nourishing snack:

  • 500 grams of beef tenderloin is cut into steaks, each of which is ground with salt and black pepper. Prepared meat boil in salted water for about 20 minutes.
  • When the meat cools down, cut it into thin and long fibers.
  • Three red onions and four Bulgarian peppers cut into long strips.
  • Well warm up the frying pan and fry on it the meat, generously sprinkled with ground pepper. Then you can add the vegetables and heat them together with beef.
