Mayonnaise: cooking recipes

Mayonnaise is nothing more than a "real" or even "noble" cold sauce, the main ingredients of which are eggs and vegetable oil. Mayonnaise is considered to be one of the main miracles of culinary art. Not only is this a highly nutritious product, it also contributes to easier digestion of food, which is added to it. Therefore, it is quite justifiably considered an indispensable addition to various dishes, which by right can be considered no less popular than ketchup and mustard.

However, the interesting fact is that the name "mayonnaise" is known to absolutely every person, however many people not only did not try it, they never saw it. And if you ever see and try real mayonnaise, the recipe of which can be easily found on the Internet, you will never confuse it with a milky white substance called "mayonnaise", which is sold in stores of our country for mass consumption in various Its variants and varieties. But all the modern "mayonnaise" presented in the stores in their composition, appearance and taste, have nothing to do with this famous sauce.

After all, the classic mayonnaise sauce, the recipe of which is reduced only to the emulsion of olive oil, diluted in a raw egg yolk with a small addition of salt, sugar and lemon juice. The truth is also possible the addition of fine spices (nutmeg , black or red pepper, lemon peel and the like). Of course, everything depends on taste and individual preferences. That's all. And notice, no milk, and a complete absence of water. So, in appearance, natural mayonnaise is a gentle gel-like consistence of translucent color of very light honey, having an exquisite delicate taste.

As a rule, mayonnaise is used in many dishes, especially without it the meals on the festive table do not. And what to do if you need to observe fasting? In fact, there is nothing complicated. Since mayonnaise is a sauce, there are all kinds of ways to prepare it with the addition of various ingredients. So you can easily prepare lean mayonnaise, the recipe of which is extremely simple, because it is based on the replacement of products allowed by the Orthodox Church.

So, the mayonnaise is lean. The recipe given below is the most common. So, you need the following ingredients:

  • Olive oil (no more than 4 tablespoons);
  • Flour (half a glass);
  • Water (one and a half cups);
  • Lemon juice (1.5 tablespoons);
  • Mustard (up to 2 and a half tablespoons);
  • Sugar (1 tablespoon);
  • Salt (not more than 1.5 teaspoons).

Having collected all the necessary ingredients, prepare the mayonnaise, the recipe of preparation must be observed very strictly. Begin by sifting through a fine flour sieve, which then add water, grind carefully (to prevent lumps). Then you need to put it on a weak fire, and do not forget to stir all the time. Heat to a boil. Remove from heat and cool down.

Then mix the mustard with olive oil, add lemon juice to the mass and mix everything to a homogeneous state. Add sugar and salt. Using a mixer, mix everything thoroughly and add the brewed flour (tiny portions). Beat for about five minutes until a thick mass is obtained.

It is very important: during the preparation process, mayonnaise should be emulsified exclusively with circular stirring, so that air bubbles do not form in the mass, which remain in the sauce, and therefore significantly reduce the shelf life due to increased oxidation. So in a quality mayonnaise, there should not be any bubbles.
