As a rule, in shops already sold poultry carcasses are sold. Therefore, many housewives do not need to know how to pluck a duck or chicken. The situation is quite different if your husband is an avid hunter. Delivering his trophies home, he does not really think about further processing of meat carcasses, because the main thing for a man is to be an earner. Therefore, his wife must involuntarily learn how to manage the game: for example, how easy it is to pluck a duck or, if necessary, to cut a hare. Let's start with the simplest lessons. This article shows several ways to quickly pluck a duck. Follow the recommendations, and you will succeed, even if not the first time, because practice is very important.

How to pluck a duck dry

This method is suitable only if the carcasses are still warm. Most often, this is how the domestic young bird is treated, with which feathers are easily removed. Place the duck on a flat surface and tear off the "fur coat", grabbing in small bundles. The direction of work is against the growth of feathers. The other hand, hold the skin to keep it from tearing. Begin with the breast and abdomen, moving to the tail, then go to the back. The latter are usually treated with wings. Unsolved "kolodochki" remove, picking them up with the point of the knife. Before singing, grate the carcass with flour and roll it with your hand. This is done so that the dry fluff is easier to remove by heating above the flame. In this case, the subcutaneous fat layer of the duck will not melt strongly. After singing, cut the bird, removing the entrails, wash it with hot water with soda, and then - with cold water.

The first way how to pluck a duck wet method

But it is not always possible to carry out a dry treatment. The most common wet method is dipping carcasses in very hot water for a while. The older the bird is, the longer before plucking, the heat treatment and the higher the temperature of the solution for scalding. Prepare a container, for example a wide iron basin, so that the duck in it freely spaced across the width. Preheat the water to a temperature of 70-90 ° C and pour it into the dishes. Immediately lower the duck, gently holding on to one of the legs and turning to evenly warm up. A young bird should not be kept in boiling water for more than 5-7 minutes, because under the influence of too high temperatures, with feathers, when plucking, the skin may later be removed. Old carcass leave in a hot solution for 10-15 minutes, periodically turning over. Remove the duck on a dry, flat surface and, after allowing it to cool slightly, use the method described above. Before singing, do not sprinkle with flour.

The second way how to pluck duck wet method

Fill a dense tissue bag with boiling water for 5-10 minutes. Then, pressing it slightly, wrap it around the duck. Leave it so for 10-12 minutes. The warmed feathers will be easily removed without damaging the skin. This "gentle" method is especially good if the carcass has hunting traces of bullets, exposing internal organs and flesh. Then act normally, gently removing the feathers. The singing can be carried out with or without flour. This nuance depends on the presence of the gun.
