Who does not like to eat homemade pickles? Marinated tomatoes, cucumbers, small patissons - all this is a real decoration of any feast. Without them, not a single family dinner or dinner. Marinated cucumbers-gherkins, the recipe of which often remains a mystery to many, are the most favorite product. What are these special pickles?

Gherkins are small cucumbers. Their length does not exceed 8 cm, ideally - 4. For some reason, exactly such copies, the size of a finger, are in greatest demand. If you cook them correctly, then such an appetizer will certainly cause real delight to the guests.

Recipe "Pickled Gherkins"

Carefully selected cucumbers must first be left soaked in iced water for about 7-8 hours. All vegetables should be absolutely clean, without rot and affected areas. Otherwise, the taste of the prepared pickle will greatly disappoint you. During soaking, it is necessary to change the water several times in the tank. This will give cucumbers elasticity and a seductive crunch.

To pickled gherkins, the recipe of which we will now disclose, turned out to be spicy and aromatic, it is necessary to use the following ingredients. Thoroughly wash several dill umbrellas, cherry leaves, black currant, add peeled garlic cloves and small horseradish roots.

We select the soaked cucumbers in accordance with the size. Rinse them again under cold running water. Sharp knife cut off the tips. Pickled gherkins (the recipe provides for the use of glass containers of small volume) must be laid out in pre-sterilized jars of 0.5 or 0.7 liters. Cook the dishes as follows. Boil the water in a small saucepan. Hold the cans over the steam so that drops form on the walls. Sterilize them until the container is completely clear, without condensation.

On the bottom of each jar, you must first put one sheet of black currant and cherry, a piece of horseradish root, a slice of freshly peeled garlic cut into two parts, one small umbrella of dill, a few peppercorns (black or fragrant). You will have wonderful pickled gherkins. The recipe provides for changing the set of ingredients to your liking.

Cucumbers must be placed in a jar very tightly, so that there is no space between the vegetables. In this case, one receptacle should contain gherkins of the same size. Banks must be poured over with boiling water. We cover the containers with lids and wait until they are completely cool. This fluid will then need to be drained (we still need it).

Pickled gherkins, the recipe of which is described in this article, are almost ready. There are not many points left. We prepare the marinade from the expressed water. The total amount of ingredients is calculated approximately by one and a half liters of liquid. You will need 3 tablespoons of salt (table), 2 times more sugar, and a little vinegar (125 ml). It is the latter component that will determine the degree of sharpness of the finished gherkins. Salt and sugar added to the water and bring it to a boil. After this, you need to pour the vinegar. Immediately fill the marinade with cans and cover them with lids. It is most convenient to use containers with thread on the neck. Banks turn upside down and wrap them in a warm blanket. Store such gherkins in the refrigerator, and at room temperature.
