Home-made pastries "brushwood" is prepared in deep-fried and is a crispy biscuit. However, among a wide variety of confectionery and bakery products, Uram (the most famous Tatar name) is slightly forgotten. It seems, it's time to recall the traditional recipe for the preparation of brushwood.

History of appearance

The name arose from the external resemblance to the thin branches of trees, and the baked goods came from the Greeks. However, when and who exactly invented the delicacy, until now no one knows. But in Russia "brushwood" appeared in the XVIII century.

Later the recipe of delicacies spread to Ukraine, where various varieties of delicacies arose. And then again, but in a slightly modified form, "brushwood" returned to the territory of Russia.

Initially, the product was popular among peasants. Soon, a crunchy cookie "settled" in the menu of urban residents. Because of the availability and cheapness of the products used in the recipe, "firewood" was prepared by poor people. Since there are no animal fats in the treat, it was used by monks during the fast.

In the 20th century, the product was made from an unleavened dough, and it became sweet thanks to the sugar powder used as a decoration.

Varieties

Crispy biscuits are made from two types of dough: steep and liquid. In the first case, milk is added, and the prepared mixture is poured into the oil in parts. Sometimes a special form for baking "brushwood" is used.

When kneading a steep test, a minimum of liquid is required. Then it is rolled out and cut using a sharp knife.

"Hvorost" is prepared:

  • On kefir;
  • From cottage cheese;
  • From an unleavened dough;
  • On milk.

Regardless of the consistency of the dough and the liquid ingredients used, "brushwood" is always crispy.

Baking "brushwood" at home

Umar is a Tatar variety of dessert, which is formed in the form of a spiral.

Necessary components of the recipe:

  • Extra salt - 4 g;
  • Eggs of chicken (medium size) - 4 pcs .;
  • Any vegetable oil - 500 ml;
  • 15 liters of melted butter;
  • Flour - 1 kg;
  • Milk - 1 item;
  • Sugar - 35 g.

Step by step technological process:

  1. Beat eggs with shallow salt and sugar.
  2. Continuing whipping, gently pour melted butter with milk.
  3. Pour the flour in parts. As a result, knead the dough.
  4. After a quarter of an hour roll the flour semi-finished product into a layer, then cut with strips up to 5 cm in width and 15 cm in length.
  5. Screw the resulting ribbons into a spiral.
  6. Fry each product in vegetable oil.
  7. Put the products on a paper napkin or towel. Wait until the excess of cooking oil drains.
  8. Before serving sprinkle uram powder.

Baking "brushwood": recipes on kefir and water

The recipe on the water is recognized as a real wand-bacon among the housewives. Popularity is due to the fact that a delicacy can be cooked at a time when the refrigerator is almost empty, and there is no way to go to the store for food.

To prepare a delicacy on water, the following ingredients will be required:

  • Boiled water - 200 ml (pre-cool);
  • Oil - 300 ml;
  • Eggs - 2 pieces;
  • A pinch of table salt;
  • Granulated sugar - 75 g;
  • Flour in / s - 2 tbsp.

Step by step technological process:

  1. Eggs to salt, pour sugar and beat with a fork until a light air consistency. The process will take no more than a minute.
  2. Pour in water, mix.
  3. Pour the flour in parts.
  4. After 15 minutes, proceed to the molding of the products.
  5. Roll out the elastic dough into a square layer (rectangular) with a thickness of 8 mm to 1 cm.
  6. Using a sharp knife, cut the flour semi-finished product into identical diamonds with a length of 7 cm and a width of 2 cm.
  7. In the center of each product, make an incision of 1 cm.
  8. Take a diamond in the hands of the dough and several times pass the upper (lower) part through the incision.
  9. In a heated frying pan pour 100 ml of vegetable oil and fry the firewood on each side for no more than 3 minutes.
  10. In the process of frying, add the necessary amount of cooking oil.
  11. Put the products on a paper towel and wait for the absorption of excess fat.
  12. Before serving, sprinkle with powder.

No less common baking "brushwood" (recipes are similar in cooking technology) on kefir. The advantage is that from the same test you can bake pizza and pies.

Necessary components of the recipe:

  • Kefir - 400 ml;
  • Granulated sugar - 5 tbsp. L .;
  • Food soda - 3 g;
  • Any vegetable oil - 45 ml;
  • Flour - 800 g;
  • Packing of vanilla sugar;
  • Eggs - 2 pieces;
  • Salt - 4 g.

Step-by-step cooking technology:

  1. From the ingredients listed, knead the dough. By consistency it should turn out to be soft, so with flour one must be extremely cautious.
  2. Dough rolled into a square layer, cut into diamonds. In the center, make a cut and rotate through it one of the parts of the product (you can leave it in the form of a diamond).
  3. Fry "brushwood" to a golden hue in a small amount of cooking oil.
  4. After roasting, carefully sprinkle them with powder. Transfer to the table with hot tea.

Caloric value

Despite the fact that baking "firewood" is light and practically weightless, the caloric content of the product varies from 300 to 600 kcal. Therefore, it is not recommended to use a delicacy in large quantities.

But if the desire to eat a large portion is stronger than the will, stick to the small tricks that are presented below.

Secrets of cooking the right "brushwood"

  • The dough can be cooked not only on milk or kefir, but also on mineral water.
  • To improve the taste and make the product more crispy consistency, it is recommended to add alcohol - vodka, cognac or rum.
  • To bake "firewood" turned out magnificent, exclude sugar from the recipe.
  • To fry it is desirable on melted butter or pork fat.
  • To make the product turned out to be less caloric, it is baked in the oven.
  • During cooking, be sure to remove the pieces of oil. Otherwise, even the smallest piece will spoil the whole taste of "brushwood".
  • The finished product is poured with honey, condensed milk, and decorated with nuts or sprinkled with cocoa. However, more often used powdered sugar.
  • To remove excess oil after frying, place the treat on a paper towel.
