A simple recipe for fried cod

The most popular dish is the fried cod. Its calorie content is 110 Kcal per 100 grams of the finished product. For some "relief", you can replace the bread crumbs with wheat flour.

- cod fillet - 500 g;

- two cloves of garlic;

- a bunch of fresh parsley;

- half a lemon;

- salt;

- bread crumbs - 150 g;

- vegetable (sunflower) oil for frying (about one glass);

- vegetable (olive or sunflower) butter for sauce (2-3 tablespoons).

Preparation

  1. First, cod is prepared. Caloric content does not depend on the size of the pieces. Their magnitude only affects the duration of frying. The finished product must have a juicy pulp and not be damp inside. Therefore, the most acceptable size - no more than seven to eight centimeters in length and four to five in width (photo 1, 2). Cut the fillets into equal pieces and sprinkle salt at the rate of one tablespoon per half a kilo of fish. Stir to allow the fish to uniformly salted, and leave for 15 to 20 minutes at room temperature. Then rinse the pieces under cold running water and flip it over the colander.
  2. Garlic clean and chop with a knife, grate on a fine grater or pass through a press.
  3. On a fine grater, grate the lemon zest and squeeze out the juice.
  4. Chop parsley finely. Then mix it with garlic, lemon zest and juice, salt (a teaspoonful) and butter.
  5. Dumplings first dip into prepared sauce, and then into breadcrumbs. Roast on hot oil in a deep frying pan. The fire should be medium, so that the pieces are well roasted inside. The preparation time on each side is approximately 5 - 7 minutes.
  6. If desired, you can bake the prepared fish in the oven, pre-sprinkling with sour cream or cream sauce with tomato and greens (photo 3), for 10 - 15 minutes. Get a very gentle and fragrant cod. Caloric content of this dish will be 115 - 120 kcal.
