The art of home winemaking: strawberry wine

We are used to the fact that real wine is made only from grapes. However, at home, you can make a delicious drink from almost any berries. For example, from strawberries.

Cooking technology: Stage 1

Grapes are choked and aged for the first time in wooden barrels. In the same containers should make wine from strawberries. For the first case, a barrel of liters is suitable for 5-6. Then, when you master the technology in perfection, you can produce a drink in large volumes. At first try these proportions: berries - one and a half to two kg; Water - 1 liter; Sugar - from 300 g to 1 kg. However, to make the wine from strawberries "play faster" and sooner the fermentation processes ended, it is better to put sugar in two receptions. The actual winemaking begins, naturally, with the preparation of berries. They need to be sorted, washed. Porcinated should be postponed so that the final product does not have an unpleasant aftertaste. Then, in the keg, the berries are kneaded with a spoon or stupa, sugar syrup is added to them, and the future wine from strawberries should be fermented. Keg close, but every day stir a lot of mass, so that the top layers are not peroxidized, and the juice itself does not turn into vinegar. The temperature at which the process will best proceed is not to exceed +20. Fermentation is quite stormy. And if there is not enough free space in the keg, under the pressure of the gases, the strawberry wine will knock out the cork and will be spilled out.

Cooking technology: Stage 2

The period of the first exposure of the product is about a week. After this time, the juice must be drained into bottles or jars. Berry masses can be wrung out, and the juice mixed with what has already been drained. If you want, add more sugar. Just do not forget that then such homemade strawberry wines will be strong (up to 18 degrees). In bottles, wine still continues to "play", and drinking it is not yet recommended. Because fermentation is in full swing, do not add liquid to the edges. And closing the stoppers, be sure to make "vent": in each stopper drill holes, insert rubber tubes, the free ends of which are lowered into the vessels with water. Then carbon dioxide will go out freely, and nothing will prevent the final transformation of the juice into wine. When can you drink it? Wine from strawberries, the recipe of which is given in the article, will be ready in a month and a half. Determine the availability can be by the color and condition of the product: it becomes transparent, the sediment settles to the bottom.

Cooking technology: Stage 3

At the last stage the drink is filtered again, bottled and densely clogged. The young wine is ready. True, it is better to postpone his tasting for a while: like a noble grape drink, strawberry also requires aging. This takes a month and a half: the wine seems to "mature", gaining flavor and taste. True, it has not been stored for longer than a year, so it is better to drink it before the end of this period. Storage temperature is from 10 to 15 degrees. It is best to do this in the refrigerator.

The culture of consumption

Drinking wine from strawberries is recommended at room temperature. You can add a little cinnamon or vanilla. Serve the drink with desserts, fruits, ice cream and other sweets.
