Meat hedgehogs in the oven - one of the most favorite dishes hostesses. This is true, since the food is very quickly prepared, does not require special skills and expensive products, it has an excellent taste and looks very appetizing.

Some people mistakenly believe that the meat hedgehogs in the oven are ordinary "lazy cabbage rolls". This is not quite true. At all similarity, these dishes still have some difference: cabbage rolls are prepared with the addition of white cabbage, and in "hedgehogs" it is not at all. For those who do not really like cabbage, the second dish will come in handy.

How to cook a hedgehog in the oven? You need to prepare the following products for this:

1. Minced meat. It is desirable that it consisted of at least two types of meat. Most often, the housewives use pork and beef. But there are those who prefer "hedgehogs" only from beef meat. If you decide to cook the hedgehogs in the oven from chicken meat, we recommend adding a little bit of fat or butter to the stuffing, otherwise the hedgehogs will turn out to be dry to the taste.

2. Fig. Usually, long-grain rice is used in this dish . It does not boil and remains intact. It is recommended to boil the rice until half cooked and cool before laying into minced meat. It is advisable not to digest the rice.

3. Onions and carrots. It is enough to grind the vegetables and add them to the stuffing, but still most of the housewives prefer to pre-pass them on cream or vegetable oil. Put in the stuffing is already chilled vegetables.

4. The egg. Adding a raw egg to mince will make it more integral, hedgehogs in this case better keep their shape.

5. Greens and spices. Use the greens that you prefer. This can be dill, parsley, and celery. Do not forget about salt and ground black pepper. You can use the already prepared set of spices for minced meat. To add a spicy taste, add one or two cloves of garlic.

Combine all ingredients, mix well with hands.

Form with wet hands small meatballs in size with a small apple and lay them on a baking sheet. (Some landladies prefer to fry slightly "hedgehogs" in a frying pan.) Pour into the baking sheet until the middle of the height of the meatballs. Close the "hedgehogs" with foil and let it rain for 40 minutes at a temperature of 180 degrees.

Next, you need to water the "hedgehogs" with the sauce. From the options below, choose the one that suits you best.

Sauce 1. Hedgehogs in sour cream.

Take a couple of spoons of flour and lightly heat in a frying pan without adding oil to beige. As soon as the flour changes color, pour to it about 2 glasses of water or broth, while stirring the corolla until smooth. Then add there half a glass of sour cream. Add salt and add sugar to taste.

Sauce 2. With mayonnaise and tomato.

Mix sour cream and mayonnaise in a ratio of 4: 1 and add a few spoons of tomato sauce. Add salt and sugar to taste.

Sauce 3. With basil and tomato.

In the saucepan pour the water, add the tomato paste. Through the garlic press, squeeze a few cloves of garlic into the saucepan, put several basil leaves and salt. Bring the sauce to a boil.

4. Cheese sauce.

In the saucepan pour a half cup of water, add three tablespoons. Sour cream and fat cream, pour about 100 g of crushed cheese. Sauce bring to a boil and pour into it a seasoning with a taste of mushrooms or chicken.

With the prepared sauce pour "hedgehogs" and leave them for a third of an hour before blushing in the oven. Sprinkle them with greens before serving.

Prepared in this way, "hedgehogs" are obtained especially tender, melting in the mouth. They are tasty as an independent dish, and you can serve them along with a garnish in the form of stewed cabbage, buckwheat, mashed potatoes.
