What is a maraschino cherry?

It is also called marasca (marasca) - a regional species of cherry growing mainly on the Dalmatian coast near Zadar. Now the variety is cultivated also in the Balkans and in the north of Italy. From such a cherry and made an eponymous liqueur. Initially, it was produced exclusively from this type of berries, but today they also use other varieties. In the British language, cherry for cocktails is called maraschino.

In the times of Tito, the Italians were expelled from these places, and cherries were planted in Northern Italy. In the same place, the liquor "Maraschino" was also produced. However, it should be noted that at the same time it was produced in Yugoslavia. In comparison with some other varieties of maraschino cherry has the smallest berries and a tart, bitter taste. From here came its name (from the Italian amaro, from the Latin amarus - "bitter").

A bit of history

The liquor "Maraschino" takes its history back in the 16th century, and the monks of Zadar began to do it. Then it belonged to the Venetian Republic. On a modern map of the world, this is Croatia. The production of Maraschino on an industrial scale started in 1759 on the initiative of F. Drioli.

And in 1821 the next factory for the production of a drink was founded, the owner of which was J. Luxardo. The cherry liqueur was so popular and popular in the 18th century that it was brought to many royal tables of Europe. Today this brand produces products in Padua under the label Luxardo Maraschino.

Beverage production

Making Maraschino is more like producing cognac than creating a classic liqueur. The raw sugar is sugared from sugar, and filtered after a long exposure. At the very beginning of the process, the maraschino cherry is ground into a homogeneous mass together with a bone and poured into Finnish ash kegs. Maraschino should be insisted there up to 3 years. Then the resulting liquor is filtered and poured into bottles.

Multiple recipes

In the culinary traditions of many countries, cherry liqueur is quite actively used for making various desserts, ice cream and delicious salads on a fruit basis.

  • For example, it is quite possible to build an appetizing dessert, which includes cream ice cream and "Maraschino" as ingredients. We take yolks from 8 eggs, one and a half glasses of sugar, a vanilla stick and a liter of milk. The whole mass is heated, gently stirring, on low heat. When the mixture begins to thicken, the ice cream must be filtered through a sieve, add a few large spoons of cherry liqueur and pour into molds. Then put the ice cream in the freezer, and we serve it together with the fruit.
  • Cocktail "Champagne Cobler". It will take "Maraschino", "Curacao", lemon juice, champagne and half peach. One serving of each of the liqueurs (20 ml) in a glass is mixed with lemon juice. A third approximately fill the container with ice. On top, put the sliced peach and fill the gaps with champagne.
  • "Maraschino" with rum is also of some interest for gourmets. Take one part of the cherry liqueur and five parts of the Cuban rum, drip a few drops of orange bitter, mix and put orange peel. We serve with ice or chilled.

In its pure form

Maraschino drink and clean. It will be correct to use it together with ice in cubes. The original and fresh taste of the drink will appeal to both the fairer sex and men. "Maraschino" has a unique aroma. Due to the fact that cherry is used in the production of the beverage along with bones, "Maraschino" has a distinct taste of almonds, than a bit like another famous drink - "Amaretto", which is made from almonds.

Maraschino with your own hands

Undoubtedly, in the current difficult economic conditions, not every average consumer can get a liqueur "Maraschino": the price is quite high (in Russia, depending on the manufacturer, it varies from 1500 to 2000 rubles per liter). You can quite try to make a famous drink with your own hands, in the kitchen. Of course, it will not be exactly right, but it must necessarily turn out delicious.

We take a pound of cherries, a bunch of cherry leaves, two liters of good vodka, one kilogram of sugar, a liter of water. We leave the berries with bones and grind them. Cooking syrup, adding a lot of water, leaves and sugar (15 minutes on a slow fire). Filter, add vodka and a pinch of citric acid (or juice of one lemon). We insist in a dark place. In principle, a few days later the home- made cherry liqueur will be ready. But it's better to let him settle for 2-3 months. Then filter again and pour into bottles. That's all, now you can taste it!
