Season with salt, saffron (or turmeric), black pepper. Stirring, stew until the liquid is reduced in volume by half. Then pour a glass of cream and stew for about five minutes. Three on a fine grater 50 grams of hard cheese. We take the fish from the oven, put it on the dish. It is desirable the same way as it was placed in a frying pan: rice in the middle, pike-perch in a circle. Pour sauce, sprinkle with cheese and immediately serve to the table.

Pike perch in the oven can be cooked not with rice, but with mushrooms, for example, with champignons. To do this, the fish must first be lightly baked for about 10 minutes. The plates of mushrooms (about 100-200 grams) are mixed with shredded onion, pepper and salt. We pour two spoons of water into the frying pan and mushrooms for about 10 minutes. We take the pike out of the oven, cover it with a "blanket" from the mushroom mass, pour a glass of sour cream and sprinkle it with grated cheese. After that, we return to the oven for another 5-10 minutes, until a ruddy crust appears on the "cap".

Pike perch in the oven is completely prepared according to a slightly different principle. We make an incision along the back of the fish, take out the skeleton and the insides, but so that the peritoneum remains intact. We rub the carcass with salt, pepper, sprinkle with lemon juice. Separately in vegetable oil fry until golden crust diced potatoes. Mix it with finely chopped dill and garlic. This mass of stuffed pike perch. We split the edges of the fish back with toothpicks and bake for half an hour in the oven until cooked. The prepared dish is decorated with lettuce and olives.
