Dried mushrooms and ways of their preparation

Do not always have fresh mushrooms on hand, from which you can prepare a lot of mouth-watering and vitamin-rich dishes. If possible, they can be replaced by a dried analog. Dried mushrooms, if properly stored, harvested for future use and use as needed. To make a dish from such products turned out delicious, you need to follow some simple rules. A feature of such a mushroom preparation is the lack of treatment using water. In another way, they are not washed. Therefore, the first thing to do is to thoroughly rinse them under the water to remove dirt, dust, sand and other debris.

Next, dried mushrooms should be soaked in water, which is added a little salt. Experts recommend keeping them in water longer so that they become softer. You can leave them in this form for the night.

After this, you need to gently pull the mushrooms out of the container. If you do this carefully, then there will be garbage at the bottom. Therefore, it is not recommended to simply drain the water. Then the mushrooms should be placed in a saucepan and filled with water. The cooking time varies depending on the type. So, for example, white mushrooms cook for about 40 minutes, and the rest about one hour. In the pan, you should also add a little salt. After that, they can be eaten in various dishes.

To make soup, you need to take about a half cup of dried white mushrooms. Usually the dried product is taken 10 times more than fresh (in grams). Pre-soak the mushrooms in the water. Further, if they are large, cut them into pieces of the right size. We put the bowl of cooking soup on fire and pour water. When it boils, put the mushrooms in the pot. Add to them the root of parsley and celery, carrot and onion. Vegetables can be put whole or cut into large parts. Cook the dried mushrooms with vegetables for about 30 minutes.

In the meantime, you can prepare other ingredients. We take another bulb and finely chop it. Also we arrive with carrots. These vegetables are sliced with the addition of vegetable oil until golden. 3-4 medium-sized potatoes must be peeled and cut into thin strips.

Next, we remove the vegetables from the broth with which the dried mushrooms were cooked. We put into it fried ingredients, sliced potatoes. If desired, put a laurel leaf and salt, pepper.

When all the ingredients are almost ready, you need to pour about 70 grams of thin vermicelli. If desired, you can use any cereal (rice, pearl barley). In this case, they need to be put a little earlier. You can not use this ingredient at all. In this case, you will get a mushroom soup with vegetables, which need to be put more. Sometimes boiled mushrooms are pulled out from a pan and added to frying vegetables (onions and carrots). After a short roast, they put everything in a saucepan. At the last moment, finely chopped parsley and dill are poured into the soup. After that, the fire is turned off. This dish should be allowed to stand for 10 minutes. After that, it can be served on the table.
