Delicious masterpiece - risotto with shrimps

Risotto with shrimps

Ingredients for four people:

- one carrot (large);

- one onion (medium);

- three glasses of fish broth;

- 250 grams of sour cream;

- olive oil;

We take a large frying pan and pour a small amount of olive oil into it . In a frying pan, lightly chop the finely chopped onions, celery and carrots. Then add shrimp. After the shrimps have acquired a pinkish color, you need to allot a little bit and put everything in a small dish, and then grind it on a blender until a homogeneous mass without any lumps.

The resulting mass is again laid out on a large frying pan, put on a small fire and add rice. It must be taken not to be boiled and not glued. Stir the base with rice and add a little broth. When one part of the broth has evaporated, only then add another. So do until half the preparedness of rice. Then add sour cream, pepper and salt. And again begin to add the broth until the rice is ready. The rice should not turn dry.

In the process of cooking, rice should be stirred constantly clockwise with a wooden spoon. On the risotto table with shrimps served slightly sprinkled with lemon. You can also decorate it with parsley, and put whole boiled shrimp on the center of the dish.

And in the following dish, a simple and tasty combination of rice, sweet corn and seafood is quite simple. And for cooking this deliciousness you will need only half an hour.

Risotto with squid and corn

Necessary ingredients (for four servings):

- one glass of round-grained rice (preferably arborio);

- one onion;

- half a kilo of fresh squid (can be frozen);

- one glass of corn (fresh or frozen);

- two cloves of garlic;

- two tablespoons of olive oil;

- two tablespoons of butter;

- parsley (fresh);

- salt;

- pepper.

To cook risotto with squids and corn, in a large frying pan fry to finely chopped onions. Then add the finely chopped garlic to the onions and fry for a couple of minutes. We attach to corn and garlic corn.

Rinse the rice and pour it into the pan, adding a little water (or broth) to it. Although the risotto is prepared quickly enough, however, it requires attention, because as the water evaporates, it needs to be poured in a little. Add the salt.

Stew rice should be about ten to fifteen minutes.

We wash squid and cut them with rings. Then add to the rice and mix in such a way that the squid is under rice. Cover the frying pan with a lid and stew for two or three minutes on a small fire. Take care that the squid does not diminish in size. Otherwise they will become rubber.

At the end of cooking, sprinkle everything with pepper, parsley (chopped) and add two tablespoons butter butter.
