Not every hostess who uses a recipe for home-made noodles for her menu knows the history of the origin of this delicious and seemingly familiar dish.

But noodles were invented so long ago that it is almost impossible to determine the exact time and place of its origin. Even in the tombs of Egyptian pharaohs were found drawings depicting the process of making noodles, and in Etruscan settlements dating to the IV century BC, found kitchen utensils, which was used for this. The noodles that we know and love now, appeared in China in the III millennium BC. Noodles were a traditional dish at weddings and birthdays, because the Chinese symbolically linked it to longevity. It was believed that the longer in a plate of noodles, the longer will be the life of the person who has eaten it.

A well-known Italian traveler Marco Polo, who lived in China for many years, brought a recipe for making noodles to Europe. And Russia first got acquainted with this product under Peter I and since then noodles have become an invariable component of our daily menu. Its own, exclusive recipe for homemade noodles, is passed down from generation to generation in many families and serves as a source of special pride for housewives. We bring to your attention one of the options for cooking noodles at home.

For this recipe, you will need: 400 grams of premium flour; 2-4 pieces of eggs; 5-10 spoonfuls of cold water; salt.

First we sift the flour, then drive the eggs into it and cut it all together with a knife to the state of crumbs. In the resulting mass, make a small groove and pour in water with dissolved salt, and then thoroughly knead the dough. It is necessary to make sure that the dough is homogeneous and steep, otherwise the noodles will stick together and not be cut properly. After kneading, cover the dough with a kitchen towel and let it stand for half an hour.

It should be noted that noodles at home are prepared long enough and the process of its preparation requires the strictest observance of technology. The dough should be divided into several parts, and then each of them rolled out a thin layer and dried. After the dough dries, sprinkle it with flour, roll it up, put it on the edge of the kitchen board and cut it into thin strips with a very sharp knife (it should be remembered that when cooking noodles increase in volume, so the width of the strips should be minimal). The resulting noodles put on a baking tray, also sprinkled with flour, and slightly dried in the oven, and then dried in the open air. The noodles are ready.

This recipe for homemade noodles is perfect for making light and nutritious vegetable aintopfa (a kind of thick soup) with noodles and mushrooms.

For this recipe you need: a small head of cauliflower, medium size zucchini squash; 1 carrot, small onion; 1 sweet pepper; 100 grams of champignons; A mixture of dried herbs; vegetable oil; 2-3 cloves of garlic; salt.

Champignons cleaned, rinsed well, cut into four pieces, if the mushrooms are small and in eight pieces - if they are large. Boil water in a saucepan, add salt, put mushrooms in it and cook until half cooked. Add to cauliflower a small cauliflower divided into small inflorescences, a zucchini marrow cut into large strips, and strips of sweet pepper. At the same time, fry the grated carrots and diced onions in vegetable oil and send them to the rest of the vegetables. When the mushrooms and vegetables are almost ready, put in the soup chopped garlic and spices and boil all together for a few more minutes.

Using the recipe for homemade noodles, cook the noodles separately, dip it into boiling water, add salt and cook until done. After that, drain the noodles, rinse with water and put in the ready-made soup. Garnish with the herbs of parsley and dill.
