Govorushka: the mushroom is interesting, but little-known. Dishes from govoroshek

Even gamblers who like to wander through the forest for their prey are little known to talk (mushroom). Not knowing it in person, even when faced with a scattering of representatives, the people pass by. Meanwhile, the govorushka is a fungus, which is interesting both as a biological object and as a culinary component.

Description of govorushki

They are the most numerous genera of mushrooms having hats. They are ranked among a family of about 250 varieties. Russia has mastered more than 60 species. The most favorite places for them were forests in the temperate climate zone, Primorye and Siberia. Govorushka (fungus) has a soft white flesh with a pronounced sweetish-spicy taste. And the name has received thanks to the unusual form of the cap, which strongly resembles a loudspeaker.

It is interesting to consider the fact that the smell quite accurately characterizes the age of the golovrushki and its culinary quality. Gather young specimens that have floral or fruity aroma, the hats are mostly used, since the legs, frankly speaking, are not very tasty.

Edible species

Not suitable for eating govorushke not so much. Among them, the mushroom govorushka edible is represented by a maximum of one and a half dozen varieties. Slightly more conditionally edible, and the majority refers to malo-edible or even poisonous.

  1. Especially good for eating is considered smoky. Goes to many dishes, suitable not only for drying and pickling. Grief causes its ubariness: during processing it decreases in volume of 4-5 times.
  2. Often there is a macehead. The fungus is rather tasteless, but is satiated and is easily determined by the shape of the base.
  3. The most laughed at the mushroom pickers is the goofball. The flesh is fresh, but it's forgiven for the almond smell. The hat has the most pronounced rupor-like shape.
  4. The anise grinder is attractive with a strong corresponding odor. To confuse it with poisonous congeners is simply impossible: they do not emit such a smell. If you do not hate this scent, you can safely collect mushrooms that have it - do not get poisoned. Like an anise soup fragrant, only the hat is yellowish.
  5. Goblet-shaped govorushka on taste qualities resembles voronchatoj, though the form quite corresponds to the descriptive name. It is collected, dried, marinated, brewed.
  6. Govorushka winter is named for the maturation period - it should be collected very late in the autumn. It grows in the Far East and the Caucasus, in Siberia and Western Europe, even in North Africa and South America. Especially recommended for soups and a variety of second courses.

We will dwell separately on the govorushka gigantic. Strictly speaking, it is ranked as a swine, but the name has exactly that. Very large mushroom with a hat to a third of a meter in diameter. The flesh is somewhat tasteless, besides, people with a weak stomach often cause its frustration. Only young specimens are put into food - at the age of the fungus it is bitter and gets tough. However, it contains an antibiotic that perfectly copes with Koch's wand.

Toxic varieties

For what fans of "quiet hunting" do not like mushrooms govorushki - edible and inedible specimens in the majority to distinguish difficult. At the same time, some of its species can not simply kill the stomach, but also lead a person to death. Especially dangerous are such varieties:

  1. Govorushka whitish. It grows in the same places as edible relatives, and successfully under them is disguised. However, when zamalivanii treacherous fungus muskarin contained in it, becomes more aggressive form and "infects" non-toxic neighbors. Within half an hour, vomiting turns out, the mind "swims", the head turns, the stomach experiences unbearable rezi. If urgent measures are not taken, death overtakes within an hour. In order not to bring a killer home with him, mushroom pickers immediately inspect the leg, which has a cut goat (mushroom). If the cut was a bitter "milk" - the fungus is not dangerous. The poisonous section remains dry.
  2. Govorushka pale-colored in her youth "pretends" to be winter and may well be confused with her. The consequences of its use are less tragic, but a week or two in the hospital will have to.
  3. Govorushka waxy mislead with a pleasant smell and taste. Strongly looks like a faker. However, this govorushka (mushroom) is deadly dangerous. Symptoms of poisoning are similar to those of Patuillard's fiber.
  4. Govorushka cash attracts a pleasant spicy smell and dense fleshy flesh. However, poisoning it is very difficult.

We cook govorushki

When there are mushrooms of golovushki, recipes in the majority demand their otvarivanija. This is done as follows.
