But few people know that from these wonderful fruits, home-made alcohol is also prepared. And if anyone knows, not everyone will dare to try it, because, unlike traditional wine cultures, apricot is very capricious. It requires a special approach. This wine has an amazing color, as if filled with the sun, like an old amber, but its taste and aroma can not be compared to any other alcoholic beverage.

Apricot wine has a very specific taste. At a low level of sugar content, it almost does not retain its fruity aroma. Sometimes this wine gets an unpleasant smell of rancid almonds. This happens if the apricot pits containing cyanide acid get into the pulp. By the way, prussic acid not only spoils the smell and taste of the drink, but it is also a powerful poison. For this reason, the wine from apricots is prepared only from fruit that has been freed from the stones.

For the preparation of wine, both wild apricots and cultivated garden varieties are used. The first will give a rich aromatic, but not too sweet drink, the latter will guarantee the expressive taste of alcohol, but a mild odor.

It is worth mentioning that before you make apricot wine, the fruits do not need to be washed. Wiping with a dry cloth will suffice. Otherwise, all the microflora necessary for the process of natural fermentation will be washed away.

Bones of fruits must be removed. Given this, preference should be given to those varieties in which the pulp is easily separated.

Choose a recipe

There are a huge number of home-made alcohol recipes with apricots. Sometimes together with them other fruits and berries are used: peaches, grapes, cherries. This allows you to get a fruit wine with a much more rich bouquet. Sometimes brightly colored fruits are added in order to obtain an expressive color, because it is almost impossible to get a beautiful bright drink from apricots alone. Remember at least a compote - it's almost colorless, well, maybe a little yellowish.

At home, you can prepare wine from apricot with different strengths. How many degrees will be in the product obtained, depends on the formulation. To increase the strength, yeast, raisins and other strong alcoholic beverages are used.

Apricot homemade wine

Ingredients:

  • Apricots - 4 kg;
  • Sugar - 4 kg;
  • Water - 16 liters.

Preparation

Prepared fruits are cleaned from the bones, poured warm water. The mixture should wander for 4-5 days. After this period, we mash the flesh of the apricots in the mash, add sugar. The next stage of fermentation will last another week. At this time, you need to mix the wort daily with a wooden spatula or spoon several times a day.

The process will be accompanied by a violent reaction with the release of gas. After the gas formation is over, the future wine needs to be filtered and bottled in clean bottles. It remains to cork and leave in a cool place for at least 2 months before full ripening.

Recipe with the addition of grape wine

An excellent fruit wine is obtained by adding spices to the classic recipe. A special role here is played by nutmeg - it makes the taste and aroma rich and expressive. In addition to these ingredients, you can add anise, tubberry, cinnamon, ginger, clove, thyme. Some people like experiments with vanilla. A pinch of saffron will not only emphasize the taste, but also significantly improve the hue.

Ingredients:

  • Apricots - 5 kg;
  • Granulated sugar - 3 kg;
  • Grape wine (table) - 1 l;
  • Nutmeg - 1 tbsp. L .;
  • Boiled water - 5 liters.

Preparation

Such apricot wine (homemade) is made from sweet varieties. Ripe fruits are cleaned with a napkin from dust, we extract bones. In any way, grind the pulp, add a little warm water and wine.

We prepare the syrup from the rest of the water and sugar. Fill them with apricot mixture. In this case, sugar plays the role of a nutrient medium for the development of microorganisms responsible for fermentation. Add spices. We leave our future apricot wine in a warm place for about a week. From time to time, the mixture should be mixed with a wooden spatula. When the process is complete, filter the wine and pour it into bottles. Ripening of this drink will last for three months. After this period, you can serve a wonderful aromatic drink to the table.

A recipe containing yeast

The fortress of such a drink will be slightly higher than that of a yeast. In addition, fermentation with yeast provides a more intense taste of the finished product.

Ingredients:

  • Apricots - 6 kg;
  • Sugar - 2,5 kg;
  • Water - 10 l;
  • Dry yeast - 2 tbsp. L .;
  • Juice of four lemons.

Preparation

From the prepared apricots, first remove the bones. Pulp grind in any convenient way, and then press. The resulting pulp is filled with boiling water, leave for 3-4 days. After this time, we filter the pulp, add sugar, yeast, lemon juice to the ferment. We put the mixture in a dark warm place for fermentation. About the readiness to say completion of the process of gas formation. As soon as this happens, stir the must and leave to rest for another 3 days.

It remains to filter the mixture and pour into the container, then leave it alone for 6 months. Ideally suited for these purposes is a wooden barrel. Six months later, the ready-made wine should be bottled, in which it will ripen. Serve this drink to the table can be only after 3 months.

Apricot - a strong home made wine

Those who prefer alcohol stronger, surely will appreciate this recipe. This apricot wine has a large enough strength, expressive aroma and rich color. And it will be completely ready in just a month.

Ingredients:

  • Apricot juice (freshly squeezed) - 1 l;
  • Vodka - 3 bottles of 0.5 liters each.

Preparation

The recipe is extremely simple: fresh house juice from apricots must be mixed with vodka, then leave the drink in a cool darkened place for 1 month. During this time, apricot comes into play. After insisting, the drink needs to be filtered and bottled, in which it will be stored. Such homemade apricot wine can be served to a table with dessert.
